I actually liked Korra better than TLA, just because Korra had a super strong story (even though it had slightly weaker characters) and presented itself amazingly.
The last 4 episodes were fantastic IMO.

We know from when Aang got shot by lightning that Katara was able to use her healing (a waterbending art) to detect and relieve chakras in other people. Thus, it is conceivable that any waterbending would have the ability to affect the Chakras in another individual. Amon would have paired his immense water and blood bending with knowledge from the Chi blockers to create a block in someone's body, thus shutting down their bending. But how??

Spoiler:Okay, so I do take a couple exceptions to what you had to say.
Because of the nature of the universe it was basically accepted that Korra was going to activate the Avatar state at some point during the finale. Surprisingly it wasn't when her bending was being sealed, and I think that shows great restraint by the storytellers.
So if you look at the fact that her bending was NOT being sealed by energybending, that means that the actual sealing is done in some other way. Notice how the act of sealing for both energybending and bloodbending was to place a finger on the forehead of the victim. What is on the forehead? The Light Chakra. Recap: The Light Chakra is opened by Insight, and Sealed by Illusion. The greatest Illusion is Separation, so by sealing the Light Chakra it creates the Illusion that a person is separated from their bending.
When she had her Chakra Sealed, she had no recourse but to dig deep into herself to try to save Mako. Remember, she didn't instantly get Airbending when she was sealed, it took Mako being nearly killed (Something that would have sent an un-sealed Avatar straight into Avatar Mode) and then she was able to pull airbending out.
Afterwards, at the south pole, feeling completely separated from those she cares about and alone, Aang comes to her to say that this was in fact an Illusion, and restores her.
My only issue with this is WHY THE HELL COULDNT KATARA RESTORE HER??? Did Katara not know about the Chakras? That seems like the sort of thing Aang might have taught her about. Amon knew about them obviously, so why wouldn't the "best healer in the world" not know what was going on?
I may have overthought this, but it was me trying to fill in any plot holes with knowledge from the previous series. It seems to make sense for the most part.
